Garden Bounty

I should be watching AJ’s play at the moment. Instead TF and I waved the rest of the family off and I put a tired little boy to bed. Not one to miss out on a chance to catch up, I spent some time in the garden. Still picking blackcurrants. I put nearly 7 kilos in the freezer tonight. Also found these whoopers in the kitchen garden. I realised that I have two more courgette plants that have appeared among the sweetcorn. Probably the seed hitched a lift with our homemade compost. I think that makes 10 plants which are producing masses of courgettes. I also collected 8 eggs from our nine hens.

Our garden production is in full swing. I love this time of year. Visitors leave with a bag of goodies and it is always an interesting challenge to dream up recipes with whatever we have a glut of. I think I might make a batch of chocolate courgette cake for the freezer. Any family-friendly courgette/zucchini recipes will be gladly received at the moment. No, I really mean it. What do you do with your courgettes?

Later: they have returned from the play. Everyone enjoyed it.

  1. Have you read the book Animal Vegetable Miracle by Barbara Kingsolver…there’s a great recipe for Chocolate Chip Zucchini Cookies in there…I freeze my zucchini in batches, just so we can have these cookies year round!!!
    Oh lordy…our zucchini is going to be starting up soon…let me know what you do with yours???

    1. Oh I like that idea. I do a pumpkin choc chip cookie, which I guess is similar. Thanks for the suggestion. I’ve found the recipe and I’m going to try it. Do you cook your zucchini before you freeze it?

  2. Glad the play went well. I’m the only one in the family who likes courgettes, so they don’t get cooked here so I can’t help with any recipes, sorry.

    1. Thanks. I’m beginning to think that courgettes are liked as much as brussel sprouts. I’m determined that the one member of the family who doesn’t like them, will grow to love them.

  3. When they escaped and grew into marrows ….we liked them cut into cubes (1/2 -1 inch sort of size) add some chopped red peppers and cook in a little butter in a covered pan till tender ..they sort of steam cook

My favourite recipe for courgette (or any squash really) is to gently fry some onion and garlic until soft (but not too brown) add your courgettes (a mixture of varieties looks and tastes even better) and fry until they are just starting to get tender (only a minute or two) then add a tub of creme fraiche, some sea salt and black pepper and bake in the oven for half an hour. It makes a delicious gooey side dish or is great with salad and fresh bread as a vegetarian main course – hope you like it too!

    1. Oh that sounds good, too. I don’t think I’ve ever cooked with creme faiche before. I like the idea of it as a side dish. I’ll try this, as well. I’m enjoying these courgette recipes. Thank you.

  5. As Cheryls husband I can safely say that both Vals and Mousy Browns sound yummy and have mine and AJ’s vote. We’ve seen rather a lot of courgette recently…

  6. A good glug of olive oil, a crushed clove of garlic, two to three zucchini; rough chop in bite sized chunks. One red onion, one green bell pepper, and three to four chopped garden tomatoes. A good handful of fresh basil; salt and pepper to taste. Simmer slowly in a deep sauce pan till vege softens and there’s a nice juice. Serve in bowls with a good, crusty bread. Or you can put it on top of pasta. Tastes even better the next day.
