And then I made a cake

Hello, weekend. I’m sure it hasn’t been long, but seeing as you’re here again, it must be right. I’m not one to look a gift horse in the mouth.

It’s been that kind of week. Life interspersed by cake eating. Washed down with a mug of tea, or hot chocolate, naturally. I have made so many cakes this week, that I may just have lost count. I ran out of butter and fell back on my favourite muffin recipes, which use oil.

Most cakes were a success. Every morsel finished. I did manage to put double the sugar in a fruit cake, which looked like an eruption. Still edible, but mighty sweet.

Week started with a snow covered, three day weekend. The snow arrived on Friday and stuck around for a couple of days. Final measurement was just short of 12 inches of snow. Enough to ensure I was glad I’d filled the food cupboard the day before, and there was no need to go out. Nothing like a household of teens to empty a fridge. By Monday, the rain started washing it away and everyone was back to school and work.

Much to Lilac the hen’s relief. She doesn’t like the snow. Not one bit.

What else has happened?

I finished sewing eldest Teen’s Cleo pinafore. Hoping to get a break in the weather, to take photos this weekend.

She’s been off babysitting again this week, a couple of times.

We watched a barn owl perched on our back fence. They are such beautiful birds and always a welcome sight.

Right. A quiet week, but filled with moments and cake. I’m ready to make the best of the weekend. Strong wind and lightening here at the moment. A couple of chocolate and peppermint cakes baked. Crushed candy cane sprinkled on top. They won’t last long. I can make more. Wish I could share it with you all.

  1. Cheryl, this reminds me of something I read years ago in the newspaper. It was about substituting oil in a butter cake recipe. They said to use a little less, as oil is thicker, or something like that. So, if your cake calls for one cup of butter, you would use 3/4 cup oil. If one stick of butter, use 6 tablespoons oil. I have tried this a couple of times, but since I like to use butter, it’s not frequent. I might hesitate on recipes which call for creaming butter and sugar, but for the ones which have you dump it all in together, I’d give it a go. I had almost forgotten about that!
    Twelve inches of snow! And gone so fast! I used to think barn owls had creepy faces, but I like them now. There is a photo I saw once of a group of them, standing together, and they looked exactly like a bunch of men dressed in Regency attire. Except for their heads.

    1. I’m going to take a note of that option, as I run out of butter more often than I should. I prefer butter as the taste is so much better.

      I love seeing our local barn owls flying over the fields. The whiteness stands out. (Oh my goodness! I kid you not. Just as I wrote that, one swooped past the window!) Love the idea of them looking like men in period costume. I shall look more closely.

  2. A week of cake sounds amazing! The chocolate and peppermint sound so good.
    You had so much snow compared to what we had. We have the strong wind here too but at the moment the sun is shining and it’s quite bright.

    1. I’m loving the chocolate and peppermint taste. I’m using up a bottle of peppermint I bought at Christmas for peppermint creams, but I may end up replacing it once it’s empty. You seem to be getting the better weather at the moment. Doesn’t say much for sunny Somerset.

  3. Cake is my absolute favourite thing ! just a shame I can’t bake. It always amazes me how creative you are I wish I had half your skills. You got so much snow, it didn’t hang around though did it, we didn’t get a lot but we’ve had plenty of rain this week. Hope you’ve had a lovely weekend. #wotw

    1. I’m sure you are a more able baker than you are letting on. Although I do think it’s an excellent excuse to try out some fabulous cakes from the bakery. 🙂

  4. mmm Cake, nice word. I made cakes last weekend, Boo helped and we made a chocolate cake and a lemon loaf cake. Neither were fully eaten thanks to this horrid virus we’ve all had. 🙁 There is nothing more soul destroying than putting cake in the bin.
    I use oil instead of butter in my carrot cake which is always a big hit. mmmm carrot cake, I wonder if we are well enough! Thanks for linking up to #wotw and I’m glad the snow has gone for your hen’s sake xx

    1. Love lemon cake. I need to find a better way to remove the zest, as that is the one step that puts me off making it. Think grazed knuckles. Yes. I don’t like throwing cake away. Can’t be helped if no one can eat it. I have been known to scrap off icing and freeze it, out of sheer desperation. Your carrot cake sounds good.

  5. You had a lot more snow than us! It looks very pretty but it is nice not to have to venture too far in it. So lovely to sit down and enjoy some cake – which reminds me I haven’t baked one in a while and really must try to rectify that sooner rather than later! #WotW
